Slow Sunday French Toast

To me, food should be something that's enjoyed on all fronts, and a key part of that for me is looking forward to it, planning it, thinking about it.
That's exactly what I love about recipes like French Toast, it can feel like you're having a bit of a food party. Of course, you can cook it on a whim, but this time I'd thought about it for quite a few days before. And since.
Homely, filling, tasty and decadent? Yes, yes, yes and yes.
You can also make a more savoury version of this by omitting the sugar, cinnamon and fruit (obvs). Also known as 'eggy bread', which I grew up on served with fresh tomatoes heavily laden with salt and herbs. Perhaps I'll post that separately some time.
Without further ado, here's your rockin' French Toast. And, don't forget to lick your plate.

Ingredients
(3-4 slices, so however many that serves. Maybe just you, and that's beautiful)
3-4 Slices (equivalent) of bread of choice; brioche would be popppin', I used sour dough because that's what I had, french bread, Tesco own brand, whatever. Even slightly stale is thought to have a competitive edge.
40ml milk of choice
2 free-range eggs*
1 tbsp white sugar, pref caster
2 tsp ground cinnamon
Knob of unsalted butter*

*I choose to source my eggs and butter from places I ensure the animals are ~actually~ free range and treated fairly - you may like to consider the same :)
Method
Whisk together milk, eggs, cinnamon, sugar in a shallow dish. Allow to sit for around 3-5 minutes and sugar to dissolve.
Soak first piece of bread in mixture, around 30sec -1 minute, flipping over for good coverage.
Heat a pan with small amount of cooking oil to high heat, then down to med-high. Add in knob of butter.
Once the butter has melted, fry slices one at a time till nicely browned, around 2 minutes each side. Pile up on a serving plate. Dust with a sprinkling of extra cinnamon.
Serve with all your heart desires.
