What's up, beautiful people?
Yesterday I made the most delicious little batch of granola so am shooting right on here to give you the goodies.
I don't know about you, but granola makes me weak at the knees; with yogurt, milks, fruit, chocolate chips. You name it, I wanna put granola on it.
There's a whole host of store bought varieties that I love but, I'll be honest, I begrudge the price. I just want the crunch. GIVE ME THE CRUNCH.
This granola recipe is great because not only is it super simple, but because you can remix it whatever which way you like.
I recently discovered that I LOVE a whole lot of cinnamon on my granola, it makes the oat milk I use really moreish. I also love toasted coconut flakes, raisins and chopped hazelnuts and pecans. Then another sprinkling of cinnamon.
I will add, this recipe does not give you the clusters of crunch that others can do, you know - the kind you root around the bag for? I put this down to not having any honey or sugar that tend to be the main sticky agent, but this recipe is so good, I don't really notice. Other than to tell you that.
LET'S GET TO IT
300g rolled oats
80ml/105g Maple syrup
60ml/52g melted coconut oil
1 tsp. cinnamon
Preheat oven to 150/130 fan/mark 2
Combine all ingredients in a bowl
Try really hard not to eat all the mixture
Spread the mixture out evenly over a baking sheet on a tray. (I prefer to do this in two batches for more even toasting).
Toast for 15-20 minutes, turn/mix half way, till golden brown. Then, remove and allow to cool before storing.

Once cooled, you may like to add more cinnamon 🥴and mix in any combo of the following:
Desiccated or flaked coconut
Finally, you may enjoy serving with:
In a salad
With milk of choice
Sprinkle over porridge
